Description

  • Place of origin: Vineyards of Nebbiolo Grapes in Madonna Como (hamlet in the town of Alba). South-east aspect.
  • Harvest time: Mid October.
  • Cultivated land: 0.3 hectare.
  • Yeld per vine: 1.1 Kg approx.
  • Method of cultivation: Classical "Guyot" method, with short pruning.
  • Average density of vines: 4,000 vines per hectare.
  • Descriptive Notes: Pleasant and well-balanced wine to taste, refined, with a great unmistakable scent, brightly coloured.
  • Wine-making: Long maceration of the grape skins; fermentation temperature: 30 -32 °C.
  • Ageing: 30% Twelve – Fifteen months in barriques; 70% Twelve – Fifteen months in barrels .
  • Bottling: Late autumn
  • Bottle ageing: Six months at the Penna Winery.
  • Consumption: The nebbiolo “Vigiotö” is good to age. This wine remains in bottle until 15 years for the good structure.
  • Serving temperature: 18°/20°C.
  • Best served with: Strong red meat, game and aged cheese.
  • Preservation: Maintain the bottles in a horizontal position, in a cool, dark room. Temperature: 15°/16° C. Humidity: 80/85% approx.
