Description

  • Place of origin: Vineyards of Dolcetto Grapes in Madonna Como (hamlet in the town of Alba). South-east aspect.
  • Harvest time: middle or end of September.
  • Cultivated land: 4 hectares.
  • Yeld per vine: 1.3 Kg approx.
  • Method of cultivation: Classical "Guyot" method, with short pruning.
  • Average density of vines: 5,000 stumps per hectare.
  • Descriptive Notes: Very balanced, full-bodied and well-structured wine; extremely fruity and ruby red-coloured. It has a delicately winy, young, fresh and velvety scent.
  • Wine-making: Middle-long maceration of the grape skins, fermentation temperature 25/28 °C.
  • Bottling: Late spring.
  • Bottle ageing: two months at the Penna Winery.
  • Consumption: To drink it within 2 years about.
  • Serving temperature: 16°/18°C.
  • Best served with: Light pasta, white meat and fresh cheese.
  • Preservation: Maintain the bottles in a horizontal position, in a cool, dark room. Temperature: 15°/16° C. Humidity: 80/85% approx.
